核磁共振和高光谱技术

核磁共振、高光谱技术与近红外技术一样,都可以实现对油酸、亚油酸等品质指标的无损测定。

核磁共振技术过去常用于测定作物种子含油量。目前市面上已有能无损测定作物油酸、亚油酸含量的NMR仪器。如SLK-200(SPINLOCK SRL,阿根廷)这款仪器(图3-57),能测定花生含水量、含油量、油酸和亚油酸含量。样品可以是单粒或多粒种子,不需预处理(表3-15)。

中国农业科学院农产品加工研究所油料加工与品质调控创新团队建立了基于高光谱成像技术检测花生中油酸含量分布的方法(王强等,2015)。高光谱成像可检测传统近红外光谱所不能提供的食品组分(如油酸和亚油酸)三维信息(Mzimbiri,2016)。
