蛋糕的制作

芝麻蛋糕卷

Sesame cake roll

原料

低筋面粉180克,细砂糖120克,鲜奶油、色拉油各80克,果酱50克,黑芝麻20克,肉松15克,泡打粉5克,香草粉、塔塔粉各1克,鸡蛋黄、鸡蛋清各4个,香葱10克。

做法

1.将低筋面粉放入盆内,加入鸡蛋黄、细砂糖60克、色拉油、鲜奶油、泡打粉调拌均匀至无颗粒时,再加入香草粉、黑芝麻搅拌均匀成浓糊状备用。

2.将鸡蛋清放入容器内,加入塔塔粉,用蛋抽子搅打片刻,分3次加入细砂糖60克,打至干性发泡,再分3次放入调拌好的浓糊成芝麻蛋糕面糊待用。

3.取烤盘1个,倒入调拌好的蛋糕面糊抹平,再撒上香葱和少许肉松,然后放入180℃的烤箱中烤25分钟至熟,取出。

4.趁热在烤好的芝麻蛋糕上均匀地涂抹上果酱,再撒上剩余的肉松,然后由内向外卷起成蛋糕卷,改刀切块即可。

Ingredients

180g cake four,4 egg yolk,120g castor sugar,80g salad oil,80g cream,5g baking powder,1g vanilla,20g black sesame seed,4 egg white,1g cream of tartar meat foss,10g chopped scallion,50g jam.

Methods

1.Put cake four in a basin, add egg yolk,60g castor sugar, salad oil, cream and baking powder to mix well, add vanilla and black sesame seed to mix as paste.

2.Add egg white and cream of tartar in other basin, beat it well and add 60g castor to beat, put paste to mix well as cake paste, pour into a bake tray, sprinkle chopped scallion and little meat foss, bake for 25 minutes till cook, take out.

3.Brush jam on the cake, sprinkle meat foss on top, roll from one side to other as cake roll, cut into pieces, take out and dish up.

巧克力蛋糕卷

Chocolate cake roll

原料

低筋面粉125克,鸡蛋400克,白砂糖150克,巧克力酱100克,鲜牛奶、色拉油各75克,玉米粉15克,泡打粉3克,精盐2克。

做法

1.将低筋面粉、玉米粉、泡打粉、精盐调拌均匀,过筛后备用。

2.将鸡蛋取蛋黄放入容器内,加入白砂糖60克拌匀至溶化,再加入鲜牛奶拌匀,然后加入色拉油调拌均匀,最后加入调匀的面粉搅拌至无颗粒时待用。

3.将鸡蛋清放入另一容器内,用蛋抽子搅打成泡沫状,加入30克白砂糖搅匀至气泡变小时,再加入剩余的白砂糖继续打至浓稠、接近干性发泡阶段备用。

4.将鸡蛋清分2次倒入调好的鸡蛋黄浓糊内,轻轻拌匀成面糊,再倒入烤盘内抹平,然后入烤箱中,用上火180℃、下火150℃烤约12分钟至熟。

5.将蛋糕取出晾凉,先在蛋糕表面涂抹上一层巧克力酱,再把蛋糕轻轻卷起成蛋糕卷,切段即成。

Methods

1.Mix egg yolk with castor sugar, fresh milk, salad oil well, add cake four, corn four, baking powder and salt to beat, combine egg white paste to mix well as cake paste.

2.Put cake paste in a baking trap and spread, put cake in a oven to roast for 12 minutes till cook, take out and cool, spread chocolate paste on top, roll as cake roll and dish up.

牛油蛋糕

Beef tallow cake

原料

低筋面粉、牛油、鸡蛋、白砂糖各150克,鲜牛奶、色拉油各25克,泡打粉7克,蛋糕乳化剂5克。

做法

1.将鸡蛋、白砂糖、鲜牛奶放入盆内,搅拌至白砂糖溶化,再慢慢加入低筋面粉、泡打粉和蛋糕乳化剂搅拌均匀成蛋糕生坯备用。

2.将牛油放入烤箱内烤至熔化,取出后倒入盛有蛋糕生坯的盆内,先用搅拌器慢速搅打1分钟,再用快速搅拌5分钟至涨发。

3.将调好的蛋糕坯料放入烤模内,入烤箱内用中温烤约25分钟至熟,取出晾凉即可。

Methods

1.Mix egg, castor sugar and fresh milk in a basin to mix well, add cake flour, baking powder and cake emulsifer slowly and beef tallow, mix well as cake paste.

2.Add cake paste in a baking trap, baking for 25 minutes till cook, take out and cool, dish up.

蛋黄糕

Egg yolk cake

原料

低筋面粉、鸡蛋黄、白砂糖各150克,色拉油25克。

做法

1.将鸡蛋黄、白砂糖倒入搅拌器内,用中速搅打至蛋液体积增至2倍时,倒入容器内备用。

2.将低筋面粉加入蛋液中搅拌均匀,和成较软的面团,揪成小剂,再压成圆形饼成生坯。

3.将烤盘涂上色拉油,放入制好的圆形饼,入烤炉内烤10分钟即成(炉温200℃)。

Methods

1.Mix egg yolk with castor sugar and beat well, add cake four to mix slowly as soft dough, form the dough into strap, cut into pieces, form pieces into balls, press as cake.

2.Brush salad oil in a baking tray, sprinkle some cake four, put cake on and baking for 10 minutes till cook, take out and serves.

香橙蛋糕卷

Cake roll with orange jam

原料

低筋面粉200克,鸡蛋、香橙果酱各250克,白砂糖150克,泡打粉5克,塔塔粉3克,香草粉2克。

做法

1.将鸡蛋放入不锈钢容器内搅拌均匀,再加入白砂糖和香草粉,用蛋抽子抽打成膨松状,然后慢慢倒入过筛的低筋面粉、泡打粉和塔塔粉,充分搅拌均匀成蛋糕浓糊备用。

2.将烤盘内铺上一张油纸,再倒入调好的蛋糕浓糊摊平,然后放入预热的烤箱内,用200℃烘烤25分钟至熟,取出待用。

3.将烤好的蛋糕表面均匀地涂抹上一层香橙果酱,再从蛋糕的一侧卷起成蛋糕卷,晾凉后改刀切块即成。

Ingredients

250g egg,150g castor sugar,2g vanilla powder,200g cake four,5g baking powder,3g cream of tartar,250g orange jam.

Methods

1.Mix egg in a stainless steel container well, add castor sugar and vanilla powder to whip, put cake four, baking powder and cream of tartar, mix well as cake paste.

2.Put oilpaper on the baking tray, add cake paste on the baking tray and baking for 25 minutes under 200℃till cook, take out.

3.Spread orange jam on the cake, roll from one side to other, cool and cut into pieces and dish up.

可可蛋糕卷

Cocoa cake

原料

低筋面粉、鸡蛋各150克,白砂糖100克,可可粉50克,糖粉、色拉油各15克,塔塔粉5克,精盐2克。

做法

1.将鸡蛋磕入容器内抽打至起泡,再加入塔塔粉、精盐、白砂糖抽打均匀,然后倒入过筛的低筋面粉、可可粉搅拌均匀,成浓稠的蛋糕糊备用。

2.取烤盘1个,刷上色拉油,再倒入调好的蛋糕糊抹平,然后放入预热的烤箱内,用190℃烘烤约20分钟至熟,取出待用。

3.将烤好的蛋糕表面撒上糖粉,取蛋糕布放在案板上,再放上烘烤好的蛋糕,然后用蛋糕布将蛋糕裹卷起成长方形,再去掉蛋糕布,改刀切块即成。

Ingredients

150g egg,5g cream of tartar,2g salt,100g castor sugar,150g cake four,50g cocoa powder,15g salad oil,15g icing sugar.

Methods

1.Mix and beat egg in a container, add cream of tartar, salt and castor sugar, continue beat, and put cake four and cocoa powder to mix as cake paste.

2.Grease salad oil on a baking tray, add cake paste, put preheated oven to baking for 20 minutes till cook, take out and sprinkle icing sugar, use cake cloth to wrap cake and roll as rectangle, remove cloth and dish up.

蜂巢蛋糕

Crown Cake

原料

低筋面粉150克,鸡蛋清125克,白砂糖100克,鸡蛋黄75克,牛奶50克,色拉油25克,橄榄油15克,朗姆酒10克,泡打粉3克。

做法

1.将低筋面粉和泡打粉混合均匀,过筛;锅中放入白砂糖50克和少许清水煮至砂糖溶化并冒小泡,再继续煮至砂糖变褐色时,加入少许清水,出锅盛在容器内晾凉备用。

2.将鸡蛋黄放入容器内,倒入调好的糖水搅匀,再慢慢倒入沙拉油、牛奶、朗姆酒混合均匀,然后加入过筛后的粉类拌匀成蛋黄面糊待用。

3.将鸡蛋清放入另一容器内,用搅拌器高速抽打至起大泡,再改中速并分次加入白砂糖50克打至干性发泡备用。

4.取1/3蛋清糊与蛋黄糊混合稀释,再将稀释好的面糊倒入蛋清糊内拌匀成浓稠状蛋糕糊。

5.将烤箱预热180℃,烤模刷上少许橄榄油,倒入调好的蛋糕糊,入烤炉内烘烤约35分钟,出炉时轻拍表面没有严重的嘶声,取出晾凉,脱模倒出蛋糕,切块即成。

Ingredients

150g cake four,3g baking powder,100g castor sugar,75g egg yolk,25g salad oil,50g milk,10g run,125g egg white,15g olive oil.

Methods

1.Heat 2tbsp water with 50g sugar in a pan, bring to boiling, stir till brown color, add 1tbswp water, put in a bowl, cool as sugar syrup.

2.Put egg yolk in a basin, add sugar syrup to mix, add salad oil, milk and rum slowly, mix well, add cake four and baking powder to mix as egg yolk paste.

3.Put egg white in other basin, beat well by mixer, add castor sugar to mix well, then mix with egg yolk paste well as crown cake paste.

4.Heat oven till 180℃,brush olive oil in the mold, add crown cake paste, and baking for about 35 minutes, take out and cool, dish up.

筒式蛋卷

Egg cake roll

原料

低筋面粉200克,鸡蛋125克,白砂糖50克,淀粉、色拉油各25克,可可粉10克,精盐3克。

做法

1.将鸡蛋、白砂糖、精盐放入搅拌器内搅打成泡,再加入低筋面粉、淀粉搅匀成鸡蛋糊;取少部分鸡蛋面糊,加入可可粉拌匀成可可糊备用。

2.将烤盘内刷上色拉油,倒入鸡蛋糊,再把可可糊装入裱花袋,裱在鸡蛋糊上待用。

3.将烤箱预热至170℃,放入烤盘烤约20分钟至熟,取出卷成蛋糕卷,晾凉后切成小段即可。

Methods

Brush salad oil in baking mold, add egg cake paste, and put cocoa paste on top, baking in oven for 20 minutes till cook, take out and roll, cool and cut into pieces, dish up.

虎皮蛋糕

Brown cake

原料

低筋面粉、鸡蛋黄各500克,白砂糖150克,色拉油50克,精盐3克。

做法

1.将鸡蛋黄放在容器内,加入精盐和白砂糖,快速搅拌至涨发成蛋黄糊。

2.将低筋面粉过筛,慢慢倒入调好的蛋黄糊内继续搅拌,再加入色拉油调拌均匀。

3.在烤盘中刷上色拉油,倒入调好的蛋糕糊并刮平表面,然后放入烤炉内,用上火250℃、下火180℃烤约5分钟,至蛋糕表皮收缩呈虎皮色,取出卷成蛋糕卷即可。

Methods

1.Put egg yolk in a container, add salt and castor sugar, mix and beat well as egg yolk paste, put sifted cake four to beat well, add salad oil to mix.

2.Brush salad oil on a bake trap, put egg yolk paste and baking in oven for 5 minutes till golden color, take out and roll, dish up.

花生蛋糕

Peanut cake

原料

低筋面粉200克,红糖、色拉油各150克,牛奶125克,花生米、香蕉各100克,可可粉50克,小苏打粉5克,鸡蛋2个。

做法

1.将低筋面粉、可可粉、小苏打粉放入容器内混拌均匀,过筛去除杂质;香蕉去皮,压成香蕉蓉;花生米去皮,压成碎粒备用。

2.将100克色拉油、红糖放入另一容器内,用打蛋器搅匀,再慢慢加入鸡蛋液拌匀,然后放入牛奶、香蕉蓉搅拌均匀,最后倒入过筛的粉类,先用打蛋器稍搅,再用竹筷子轻轻拌匀成蛋糕浓糊待用。

3.将蛋糕模具内刷上少许色拉油(50克),再倒入调好的蛋糕糊,表面撒上碎花生米,然后放入烤炉内用175℃烤20分钟至熟,取出翻扣在盘内即成。

Methods

1.Put cake four, cocoa powder and baking soda in a container to mix and sift, shell banana and press, peel peanut and crush.

2.Mix 100g cooking oil with brown sugar, beat and add egg, milk and minced banana to mix well, add sift four to beat well as cake paste.

3.Brush little cooking oil on cake mold, add cake paste, sprinkle peanut on top, bake in oven for 20 minutes till cook, take out and serves.

芝士蛋糕

Cheese cake

原料

芝士500克,低筋面粉250克,白砂糖175克,鸡蛋黄、鸡蛋清、牛油各150克,酸芝士100克,糖粉75克,可可粉30克,发酵粉10克。

做法

1.将200克低筋面粉、可可粉,发酵粉和50克白砂糖放入容器内混合拌匀,再加入牛油和少许清水调拌均匀成面团,发酵1小时备用。

2.取23厘米大小的模具,涂抹上少许牛油,再把面团擀成比较厚的圆片,放入模具内成馅皮,然后入预热至180C的烤炉内烤约10分钟,取出冷却待用。

3.将芝士、125克白砂糖、50克低筋面粉、酸芝士和鸡蛋黄调拌均匀,再慢慢加入鸡蛋清搅拌均匀成芝士蛋糕馅料。

4.将调好的芝士蛋糕馅料酿入晾凉的蛋糕面皮内,放入烤炉内用中低火烘烤约30分钟,取出冷却,撒上糖粉点缀即可。

Methods

1.Mix cake four, cocoa powder, baking powder and castor sugar in a basin, add beef tallow and water to knead as dough, rest for hour, press as round wrapper, baking for 10 minutes, take out and cool.

2.Stuff with cheese stuff within cake, baking over low temperature in oven for 30 minutes, take out and cool, sprinkle with icing sugar to garnish.

香橙卷

Cake with orange jam

原料

鸡蛋300克,低筋面粉、白砂糖各150克,香橙果酱100克,牛奶、蛋糕油、色拉油各15克,椰蓉少许。

做法

1.将鸡蛋、白砂糖、蛋糕油放入搅拌器内搅打至白砂糖溶化,再加入低筋面粉用高速打发,然后慢慢倒入牛奶、色拉油搅匀成面糊。

2.取烤盘1个,刷上少许色拉油,再倒入面糊抹平,然后入烤箱用180℃烘烤约25分钟。

3.将烤熟的蛋糕取出晾凉,在蛋糕表面涂抹上一层香橙果酱,卷成卷,然后在蛋糕卷表面抹上少许香橙果酱,再撒上椰蓉即成。

香蕉蛋糕

Banana cake

原料

低筋面粉500克,香蕉400克,白糖300克,鸡蛋250克,牛奶150克,色拉油75克,小苏打5克。

做法

1.将香蕉去皮,取果肉压成蓉,再放入搅拌器中,加入白糖、鸡蛋液搅匀,再放入牛奶、面粉、小苏打和少许清水继续打至浓糊状。

2.取烤盘1个,刷上一层色拉油,倒入调好的浓糊,再放入预热的烤箱内,用180℃烤约30分钟至熟,取出装盘即可。

Methods

1.Shell and mash banana, add in a mixer to beat with sugar and egg well.add milk, four and water in paste to mix and beat well as banana cake paste.

2.Brush salad oil in the bake trap, pour cake paste and roast in oven for 30 minutes till cook, take out and dish up.

奶味水果蛋糕

Cream cake with fruits

原料

低筋面粉250克,鸡蛋200克,白砂糖、奶油各150克,色拉油50克,蜂蜜、三花淡奶各25克,鹰粟粉20克,精盐5克,各种时令水果适量。

做法

1.将鸡蛋放入大碗中,加入白砂糖、蜂蜜、精盐,用蛋抽子抽打至起泡成鸡蛋糊;各种水果洗净,切成小块备用。

2.将低筋面粉、鹰粟粉放入搅拌器内搅匀,再加入三花淡奶、色拉油,用慢速搅拌3分钟至浓稠,然后倒入调好的鸡蛋糊,用高速搅打5分钟成蛋糕浓糊待用。

3.取圆形烤模,刷上一层色拉油,再倒入调好的蛋糕浓糊抹平,然后放入烤炉内,用中温烘烤约25分钟至表面金黄色。

4.将烤好的蛋糕取出,冷却后在蛋糕表面均匀地涂上一层奶油,再摆上各种水果加以点缀和装饰即可。

Ingredients

200g egg,150g castor sugar,25g honey,5g salt,250g cake four,20g corn starch,25g evaporated milk,50g salad oil,150g cream,100g various fruits.

Methods

1.Put egg in a bowl, add castor sugar, honey and salt, mix and beat well as egg paste, clean and cut various fruits into cubes.

2.Mix cake four and corn starch in mixer, add evaporated milk and salad oil, beat by slow speed for 3 minutes, put egg paste to beat for 5 minutes by high speed as cake paste.

3.Brush salad oil in a round cake mold, put cake paste and put in a oven to baking for 25 minutes till golden yellow color.

4.Take out cake, and cool, then spread with cream on cake, add fruits cubes on top to decorate and garnish.

伯爵蛋糕

Earl cake

原料

鸡蛋200克,低筋面粉150克,糖粉、可可粉、色拉油各25克,塔塔粉、泡打粉、干海苔各5克,精盐2克。

做法

1.将鸡蛋磕入容器内,用打蛋器抽打至起泡,再放入塔塔粉、精盐、糖粉搅拌均匀,然后倒入过筛的低筋面粉、泡打粉、可可粉调匀,最后加入干海苔搅拌均匀成面糊状备用。

2.取烤盘1个,刷上少许色拉油,再倒入调好的蛋糕糊抹平,然后放入烤箱内,用180℃烘烤约20分钟。

3.将烤制好的蛋糕取出,晾凉后用面包刀切成条块或其他形状,装盘上桌即成。

Ingredients

200g egg,5g cream of tartar,2g salt,25g icing sugar,150g cake flour,5g baking powder,25g cocoa powder,5g ground seaweed,25g salad oil.

Methods

1.Beat egg well in mixer, add cream of tartar, salt and icing sugar to mix well, put sifted cake four, baking powder and cocoa powder to mix well, put ground seaweed to mix as cake paste.

2.Brush salad oil on baking tray, add cake paste and baking in oven to baking for 20 minutes by 180℃till cook, take out and cut into pieces and serves.

红豆蛋糕卷

Red bean cake

原料

鸡蛋250克,低筋面粉150克,白砂糖125克,红豆25克,色拉油15克,泡打粉、塔塔粉各5克,精盐1克。

做法

1.将红豆放入清水中浸泡至软;鸡蛋磕入容器内搅拌均匀,再加入白砂糖、精盐、泡打粉拌匀备用。

2.将过筛后的低筋面粉、塔塔粉倒入蛋液中,调制成较浓稠的糊状,再放入浸泡好的红豆调匀成蛋糕糊待用。

3.将烤盘内涂抹上色拉油,再倒入调制好的蛋糕糊抹平(厚约0.5厘米),然后放入预热200℃的烤炉内烘烤约15分钟,至色泽金黄时取出晾凉,卷成蛋糕卷,再切成块即可。

25g red beans,250g egg,125g castor sugar,1g salt,5g baking powder,150g cake four,5g cream of tartar,15g salad oil.

Methods

1.Soak red beans in water till soft;put egg in container to mix well, add castor sugar, salt and baking powder to mix.

2.Sift cake four and cream of tartar and put in container, still mix well as thick cake paste, then add red beans to mix well.

3.Brush salad oil on the baking tray, add cake paste, put in preheat oven to baking for 15 minutes under 200℃till golden color, take out and cool, roll and cut into pieces, dish up.

椰蓉蛋糕卷

Coconut cake

原料

低筋面粉250克,鸡蛋200克,白砂糖100克,椰蓉、鲜奶油各50克,淀粉40克,光亮剂5克,精盐3克。

做法

1.将鸡蛋磕入容器内,加入白砂糖、精盐搅拌均匀;低筋面粉、淀粉调拌均匀,过筛备用。

2.将过筛的粉类慢慢倒入盛有鸡蛋液的容器内搅匀成糊,再把蛋糊倒入烤盘内抹成厚约0.5厘米的蛋糕片,然后放入烤箱内,用中火烘烤10分钟至熟。

3.将烤好的蛋糕片取出,冷却后在表面涂抹上一层鲜奶油,再卷起成蛋糕卷,然后在表面涂抹上光亮剂,撒上椰蓉,切成小段即可。

200g egg,100g castor sugar,3g salt,250g cake four,40g corn starch,50g fresh milk,5g glaze,50g coconut curl.

Methods

1.Put egg in a container, add castor sugar and salt to mix well;mix cake four and corn starch well and sift.2.Add cake four and corn starch into the egg liquid to mix as paste, pour into a baking tray, baking in the oven for 10 minutes till cook.

3.Take out cake and cool, spread with fresh milk on top, roll and brush with glaze, sprinkle with coconut curl, cut into pieces and dish up.

鲜果蛋糕

Fresh fruit cake

原料

圆形蛋糕坯1个,鲜奶油500克,各种鲜果150克,蛋糕光亮剂50克,巧克力片20克。

做法

1.将圆形蛋糕坯表面及四周均匀地涂抹上鲜奶油,再将鲜奶油表面轻轻地抹上蛋糕光亮剂做成花样蛋糕。

2.将各种鲜果洗净,切成小块,放在蛋糕上用于装饰,然后在蛋糕的四周粘贴上巧克力片加以点缀即成。

Ingredients

One blank round cake 500g fresh cream 50g glaze 150g fresh fruit 20g chocolate chip

Methods

Spread cream on the blank round cake, then brush with glaze well, cut fresh fruit into cubes, sprinkle on the cake to garnish, then dip chocolate chip around cake, dish up.

咖啡卷

Coffee cake roll

原料

鸡蛋250克,低筋面粉、白砂糖各150克,牛奶120克,奶油25克,咖啡粉、蛋糕油、色拉油各15克。

做法

1.将鸡蛋、白砂糖、蛋糕油放入搅拌器内,搅打至白砂糖完全溶化,再慢慢加入低筋面粉搅拌均匀,用高速打发成型,然后加入牛奶、色拉油搅匀成蛋糕浓糊备用。

2.将调好的蛋糕糊分成两份,其中一份蛋糕糊中加入咖啡粉调成咖啡蛋糕糊,倒入烤盘内,入烤箱内烤熟,取出切成小条。

3.将另一份蛋糕浓糊倒入烤盘内抹平(厚度要薄一些),放入烤箱内,用中温烘烤约20分钟至熟,取出晾凉,再涂抹上奶油,中间放上几条咖啡味蛋糕条,卷成卷后即可。

水果蛋糕

Cake with orange

原料

鸡蛋250克,低筋面粉、麦淇淋各200克,白砂糖150克,橙子125克,菠萝50克,色拉油40克,葡萄干、朗姆酒各25克,牛奶15克,泡打粉5克。

做法

1.将白砂糖、麦淇淋、朗姆酒放入搅拌器内,用慢速搅打2分钟,再分2~3次加入鸡蛋液,并用慢速搅打3分钟至涨发。

2.将过筛的低筋面粉、泡打粉慢慢倒入蛋液中搅拌均匀,再加入牛奶、色拉油、葡萄干,用高速搅打约5分钟成蛋糕浓糊。

3.将烤盘刷上少许色拉油,再倒入调好的蛋糕浓糊抹平,然后放入烤箱内,用180℃烘烤约35分钟至熟,取出后撒上切成小块的橙子、菠萝等水果和奶油花加以点缀,食用时切成条块即成。

150g castor sugar,200g margarine,25g rum,250g egg,200g cake four,5g baking powder,15g milk,40g salad oil,25g raisin,50g pine apple.

Methods

1.Put castor sugar, margarine and rum in mixer, beat for 2 minutes by low speed, add egg to mix for 3 minutes.

1.将鸡蛋放入搅拌器内搅拌均匀,再加入糖粉、蓝莓酱25克,用慢速搅打2分钟至起泡。

2.将低筋面粉与泡打粉调拌均匀,过筛后倒入盛有鸡蛋的搅拌器内,用高速搅拌约5分钟成蛋糕浓糊。

3.取一特制烤盘,刷上色拉油,倒入调好的蛋糕浓糊抹平,放入预热190℃的烤箱内烤20分钟至熟。

4.将烤好的蛋糕取出,表面涂抹上剩余的蓝莓酱,再放上一层蛋糕,然后在蛋糕表面涂抹上奶油,最后用水果加以点缀即可。

原料

奶酪350克,牛奶、鸡蛋各250克,奶油100克,白砂糖、玉米粉各75克,淀粉、糖粉各25克,色拉油15克。

做法

1.将75克奶油放入容器内,入烤箱内烤至熔化,取出后加入100克牛奶、糖粉调拌均匀成奶油糊,再倒入刷有色拉油的模具中备用。

2.将奶酪软化,加入白砂糖、鸡蛋,用蛋抽子抽打均匀,再放入玉米粉、淀粉调匀成浓糊,然后加入150克牛奶和25克奶油,充分搅拌均匀成奶酪浓糊,倒在盛有奶油糊的烤模内。

3.将烤箱预热至180℃,放入烤盘烤约30分钟至熟,取出扣出蛋糕即成。

低筋面粉250克,鸡蛋150克,牛奶175克,蓝莓果酱、杏仁果酱各100克,牛油15克,精盐3克,杂果少许。

做法

1.将低筋面粉、鸡蛋液、牛奶、牛油、精盐和适量清水放入容器中搅匀,制成面糊;杂果切碎,与蓝莓果酱调匀备用。

2.煎锅上火烧热,放入少许色拉油烧至六成热,再薄薄地倒入一层调好的面糊盖住锅底,用中小火煎至两面呈金黄色待用。

3.取出煎好的面饼,夹上蓝莓果酱和杂果,表面刷上杏仁果酱即成。

原料

低筋面粉250克,白砂糖200克,黄油180克,鸡蛋清150克,鸡蛋黄100克,可可粉、色拉油各15克。

做法

1.将低筋面粉过筛,加入鸡蛋黄搅拌均匀成蛋黄糊;黄油放在室温内软化,加入100克白砂糖搅匀成黄油糊;鸡蛋清放入搅拌器内,加入100克白砂糖用慢速搅打至起泡成蛋清糊。

2.取2/3的蛋清糊、黄油糊和蛋黄糊,放入容器内拌匀成黄色面糊,再把剩余的蛋清糊、蛋黄糊和黄油糊加入可可粉调匀成咖啡色面糊。

3.将烤盘刷上色拉油,分别倒入黄色面糊和咖啡色面糊,轻轻搅拌一下,使两种面糊混合在一起成大理石蛋糕生坯。

4.将烤箱预热180℃,放入盛有蛋糕生坯的烤盘烘烤35分钟至熟,取出扣出蛋糕,晾凉后改刀切块即可。

1.Sift cake four and mix with egg yolk well as egg yolk paste;soft butter and mix with 100g castor sugar well as butter paste;put egg white in mixer, mix with 100g castor sugar to beat well by low speed as egg white paste.

2.Mix 2/3 egg yolk paste, butter paste and egg white paste well as yellow color paste.Mix remaining paste with cocoa powder as brown paste.

3.Brush salad oil on baking tray, put yellow paste and brown paste and mix together lightly as marble cake paste, and baking in preheat oven to baking for 35 minutes till cook, take out and cool, cut into pieces and serves.

3.将烤好的蛋糕取出晾凉,再将抽打好的鲜奶油放入裱花袋内,在蛋糕表面裱成米老鼠形状即成。

2.将烤盘刷上色拉油,倒入浓糊,放入烤箱内,用180℃烘烤15分钟,取出蛋糕,在表面涂抹上一层果酱,再撒上糖粉即成。

2.将低筋面粉、泡打粉过筛拌匀,放入盛有鸡蛋液的容器内,搅拌均匀成浓糊状。

3.取烤模刷上色拉油,倒入4/5的蛋糕面糊,放入烤箱内,用190℃烘烤10分钟,取出。

4.将剩余的1/5蛋糕面糊加入椰丝拌匀,放入裱花袋内,裱在蛋糕上,再放入烤箱内烤10分钟至熟,取出蛋糕,用蛋糕花纸装好即可。

3.Mix remaining 1/5 cake paste with dessicated coconut, put in mounting pattern bag, force on the cake, baking in oven again for 10 minutes till cook, take out and serves.

2.将鸡蛋磕入盆内抽打起泡,再加入糖粉、精盐、色拉油搅拌均匀,然后倒入调好的各种面粉抽打成浓糊,再撒上花生米碎粒拌匀成蛋糕面糊。

3.取烤盘刷上色拉油,倒入蛋糕面糊抹平,放入预热的烤箱内,用180℃烘烤约25分钟,取出晾凉,改刀切成块即成。
